Sheet Pan Garlic Roast Pork Chops

Ingredients

  • 4, (8-oz.) boneless pork chops

  • Cooking spray

  • 2 tsp garlic powder

  • 1 tbsp Dijon mustard

  • 2½ cups broccolini, chopped into 2-inch pieces

  • 2 cups turnips, cut into 1-inch pieces

  • 1½ cups cherry tomatoes

  • 4 tsp olive oil, divided

  • 4 tbsp grated reduced fat Parmesan cheese

  • ½ tsp salt


Directions

  1. Preheat oven to 450°F.

  2. Place the pork chops on one side of a foil lined sheet tray sprayed with cooking spray.

  3. Sprinkle both sides with garlic powder, then brush with the mustard.

  4. In a bowl, toss the broccolini, turnips and cherry tomatoes with the olive oil.

  5. Arrange the vegetables on the other side of the sheet tray. Sprinkle everything with parmesan cheese and salt.

  6. Roast for 25 minutes, until pork chops are cooked through (150°F) and the turnips and broccolini are tender.

  7. Divide equally among plates and enjoy!
