Poblano Pork Chops

Ingredients
1 cup poblano pepper, seeded and thinly sliced
½ cup chopped scallions
Cooking spray
½ lb. pork chop
¼ tsp salt
¼ tsp pepper
2 tsp olive oil
⅓ cup vegetable stock
Directions
Preheat the oven to 400ºF or set the air fryer to broil at 325ºF.
Mix the poblano peppers and scallions on a small baking sheet and spray with cooking spray.
Roast or broil, stirring occasionally, until softened and charred in spots, about 8 minutes. Set aside.
Season the pork with salt and pepper.
Heat a small non-stick skillet with the olive oil.
Add the pork and cook until well browned, about 5 to 7 minutes per side. Remove to a plate.
Add the poblano mixture to the skillet, followed by the broth; cook for another 3 to 5 minutes, scraping up any browned bits.
Serve the poblano mixture on top of the pork chop and enjoy.
