Poblano Pork Chops

Ingredients

  • 1 cup poblano pepper, seeded and thinly sliced

  • ½ cup chopped scallions

  • Cooking spray

  • ½ lb. pork chop

  • ¼ tsp salt

  • ¼ tsp pepper

  • 2 tsp olive oil

  • ⅓ cup vegetable stock


Directions

  1. Preheat the oven to 400ºF or set the air fryer to broil at 325ºF.

  2. Mix the poblano peppers and scallions on a small baking sheet and spray with cooking spray.

  3. Roast or broil, stirring occasionally, until softened and charred in spots, about 8 minutes. Set aside.

  4. Season the pork with salt and pepper.

  5. Heat a small non-stick skillet with the olive oil.

  6. Add the pork and cook until well browned, about 5 to 7 minutes per side. Remove to a plate.

  7. Add the poblano mixture to the skillet, followed by the broth; cook for another 3 to 5 minutes, scraping up any browned bits.

  8. Serve the poblano mixture on top of the pork chop and enjoy.
