Rainbow Thunder Tea Rice

Ingredients

  • ½ cup fresh basil leaves

  • ½ cup fresh mint leaves

  • ½ cup fresh coriander leaves

  • 1½ tbsp roasted sesame seeds or flaxseeds

  • 1⅓ oz. roasted peanut

  • ½ cup water

  • 1 cup chopped green beans

  • 1 cup cubed radish

  • 1 cup chopped bell peppers (red or yellow)

  • 14 oz. smoked tofu (Tau Kwa), cubed

  • 6 hardboiled eggs

  • ½ tsp canola oil

  • 1½ tsp sunflower seeds

  • 3 cups riced cauliflower


Directions

  1. Prepare the tea sauce: In a blender, blend peanuts and sesame seeds until fine, adding some water as needed. Add in all the herb leaves with some water to continue to blend until the mixture reaches a smooth paste consistency.

  2. Steam the riced cauliflower in microwave or on stove until tender; set aside.

  3. Stir-fry the green beans, radish, mushroom and bell pepper and set aside, with each ingredient in a separate bowl.

  4. Place the smoked tofu in the air fryer. Set your air fryer to 400°F and cook for 10 minutes, shaking the basket after 5 minutes, and then continuing to cook.

  5. Chop hardboiled eggs.

  6. To serve, scoop ¼ of the cooked riced cauliflower into a bowl and assemble the veggies and protein individually. In a small bowl, add 2 teaspoons of the paste with hot water. Serve the riced cauliflower bowl with the bowl of warm tea paste.
