Cloud Bread Turkey Avocado Sandwich

“Bread” made from whipped egg whites combined with egg yolks and Greek yogurt or cream cheese. Formed into buns and baked.

Ingredients
3 eggs, separated
3 tbsp reduced-fat cream cheese softened to room temperature
½ tsp cream of tartar (or baking powder)
Directions
Line 2 baking sheets with parchment and place in a 300°F preheated oven.
In a small bowl, beat softened cream cheese until smooth. Use either a wooden spoon or hand mixer. Add the egg yolks and beat until well combined.
To the very clean bowl of a standing mixer or with a hand mixer. add egg whites and cream of tartar. Whip on high speed, until stiff peaks form.
Gently fold yolk mixture into whipped whites with a spatula, mixing until just combined, don’t over mix.
Remove pans from oven. Spoon dollops of mixture onto pans and use the back of a spoon to slightly flatten into 8, (4 to 5-inch) bread “rounds.”
Bake 15 to 20 minutes until firm and lightly golden brown. The center should not be soft.
Allow to cool slightly before enjoying.
Put aside 2 rounds for the Cloud Bread Turkey Avocado Sandwich. Transfer the extra rounds to a large plastic bag or airtight container and store in the fridge for up to 3 days or in the freezer for up to 2 months.

Ingredients
2 tsp light mayonnaise
½ tsp lemon juice
¼ tsp black pepper
2 rounds cloud bread
1 cup arugula
2 slices tomato
¼ avocado, sliced (about 3 slices)
5 oz. sliced roast turkey breast
¼ cup sliced radishes
¼ cup alfalfa sprouts
Directions
Mix together the mayonnaise, lemon juice, salt and black pepper.
Smear over both sides of the cloud bread rounds.
Build sandwich with arugula, tomato slices, avocado, roast turkey, radishes and alfalfa sprouts.
Top with could bread round.
