Tuna Salad Bento Box

Ingredients

  • 1, (5-oz.) can chunk light tuna in water

  • ½ cup diced celery

  • 2 tbsp chopped red onion

  • ¼ cup plain Greek yogurt

  • 1 tbsp mayonnaise

  • ½ tsp Dijon mustard

  • ⅛ tsp salt & ground black pepper

  • 1 hardboiled egg or 1 oz. reduced-fat cheese

  • 1 cup raw veggie dippers, such as halved mini bell peppers, celery sticks, sliced radishes or cucumber

 

Directions

  1. Make the tuna salad: In a small bowl, combine the tuna (drained), diced celery, red onion, Greek yogurt, mayo, Dijon, salt, and pepper. Mix well with a fork until evenly combined.

  2. Assemble the box: Spoon the tuna salad into one section of a lunch or bento box.

  3. Add protein and veggies: In the remaining sections, add the hardboiled egg (or cheese) and raw veggies such as mini bell peppers, celery sticks, radishes, or cucumber slices.

  4. Pack and chill: Cover and refrigerate until ready to eat.
