Air-Fried Crispy Fish with Buttermilk Ranch Dressing

Prep Time: 15 minutes



Ingredients:

  • 4 egg whites

  • 3 cups green beans

  • 4 tbsp reduced-fat Parmesan cheese

  • Cooking oil spray

  • ¼ tsp salt

  • 3 cups shredded red and/or green cabbage

  • 8 tbsp Hidden Valley Buttermilk Ranch Light Dressing, divided

  • 1½ lbs. cod fish fillets

  • 2 large eggs

  • 6½ tbsp almond flour

  • 2 tsp cornmeal

  • ½ tsp garlic powder



Directions:

  1. Preheat the air fryer to 425°F.

  2. Whisk the egg whites until frothy. Toss the green beans in the egg white and then roll in the Parmesan mixture to coat well. Spray air fryer with cooking spray. Place green beans in a single layer and air fry for 8 to 10 minutes until crispy and cooked. Remove from air fryer and sprinkle with salt. Hold in a warm oven or let sit out at room temperature until ready to eat.

  3. Toss the shredded cabbage with 4 tablespoons of Hidden Ranch Buttermilk Ranch Light Dressing. Chill until ready to serve

  4. Pat the cod fillets dry and cut into 1-inch wide and 3-inch long strips. You should get about 20 to 24 strips.

  5. Whisk the eggs in a medium bowl. In a separate shallow bowl or plate, mix the almond flour, cornmeal, and garlic powder.

  6. Dip the fish into the egg then into the almond flour mixture. Place coated fish on a platter and repeat until all fillets are coated.

  7. Spray the air fryer with cooking spray, spray the fish and air fry for 15 minutes, turning halfway through cooking time. Cook in batches if necessary.

  8. To serve, place 5 to 6 crispy fish strips on a plate. Add ¾ cup green bean fries and ¾ cup cabbage slaw. Serve with 1 tablespoon each Hidden Valley Buttermilk Ranch Light Dressing for dipping.
