Shrimp Caesar Salad with Parmesan Crisps

Ingredients
2 lbs. extra-large shrimp, peeled and deveined (16-20 per pound)
12 tbsp Parmesan cheese, grated
6 cups romaine lettuce, shredded
2 cups arugula
1 cup celery, chopped
8 tbsp Caesar dressing, such as Kraft’s Classic Caesar
Ground black pepper to garnish (optional)
Directions
Preheat oven to 425°F.
Onto a foil or parchment lined sheet tray sprayed with cooking spray, add the shrimp in a single layer. Spray shrimp with cooking spray and sprinkle with 4 tablespoons of Parmesan cheese.
Onto a second silicone or parchment lined sheet tray, pile tablespoons of Parmesan cheese about ½-inch apart, for a total of 8 mounds. Lightly pat the mounds down with the back of a spoon.
Place both sheet trays in the oven. Roast the shrimp until pink, about 15 minutes and the Parmesan until golden and crisp, about 3 to 5 minutes. Remove both from oven and let cool.
To assemble, toss together the romaine, arugula, and celery. Place 2 cups of the lettuce mix on a plate and top with 9 to 10 roasted shrimp. Garnish with 2 Parmesan crisps and ground black pepper (optional) and drizzle with 2 tablespoons Caesar Dressing.
