Shrimp Nicoise Bowls

Ingredients
1, (12-oz.) bag trimmed haricot verts or thin green beans
1, (1-lb.) container microwave-ready baby or fingerling potatoes
4 hardboiled eggs
8 tbsp balsamic vinaigrette
4 cups Spring mix
1 cup cherry tomatoes
12 oz. cooked, peeled and deveined shrimp
½ tsp ground black pepper
Directions
Microwave haricots verts (or green beans) according to package instructions (about 2 to 4 minutes); set aside to cool.
Microwave potatoes according to package instructions (about 5 minutes); set aside to cool.
Cut eggs in half; set aside.
Divide balsamic vinaigrette into equal portions (2 tablespoons per serving) and place each into resealable containers.
Divide the Spring mix into meal prep containers (1 cup per container). Add 1 cup of green beans to each one, along with a ¼ of the potatoes, 2 egg halves, ¼ cup of tomatoes, and a pinch of pepper.
Seal the containers and refrigerate for up to 4 days.
When ready to eat, unthaw the shrimp (if frozen) by running shrimp under cool water for 2 to 3 minutes or until thawed. Add 3 oz. of shrimp to each container.
When ready to eat, drizzle pre-portioned dressing on top.
Tips & Tricks
You can microwave your own baby or fingerling potatoes: rinse under water, poke a few holes in each potato with a fork, and place the potatoes in a microwave-safe dish. Add 1 to 2 tablespoons of water to the dish, and then cover and microwave for 5 minutes. Check to see if the potatoes are done and if not, continue to microwave in 1-minute increments. Let them rest and cool prior to storing.
You can swap a whole grain (like brown rice, quinoa, or whole wheat pasta) for the potatoes (⅓ cup cooked whole grain per serving; 1⅓ cup total for all 4 servings).
To save time, buy hardboiled, peeled eggs at the grocery store.
