Yield: 2 servings
Per Serving: 1 Lean, 3 Green, 3 Condiments
Prep Time: 15 minutes
Total Time: 30 minutes
Ingredients
12 oz. flat iron or flank steak
1 tsp salt, divided
½ tsp garlic powder
½ tsp ground oregano
2 cups sliced portobello mushrooms
1 cup whole roasted red peppers jarred (in water), drained (about 5 oz.)
Directions
Season the beef with a ½ teaspoon of salt, garlic powder and oregano; set aside.
Preheat a grill or grill pan and grill the steak for about 3 to 4 minutes on each side until an internal temperature of 145°F (medium-well; see note below). Remove the steak from grill and keep warm.
Grill the sliced mushrooms for 4 to 5 minutes on all sides until well browned; season the grilled mushroom with a ¼ teaspoon of salt.
Grill the whole roasted red peppers on one side for about 1 to 2 minutes, aiming to get strong grill marks. Season the grilled peppers with ¼ teaspoon of salt.
Slice the steak into ¼-inch thick slices.
Evenly divide the mushrooms and peppers onto plates and top each serving with 5 ounces steak.
Note: For medium-rare, cook the beef to an internal temperature of 125°F; for medium to 135°F; for medium-well to 145°F; and for well-done to 160°F.
