Total Time: 40 minutes
Prep Time: 10 minutes
Ingredients:
Cooking spray
2 cups (3 or 4) small or baby turnips, peeled, halved or quartered
1 tsp chopped fresh or dried rosemary
½ tsp salt, divided
12 oz. lean steak, filet or sirloin
¼ tsp pepper
2 cups fresh spinach
Instructions:
Preheat your oven to 400ºF.
Line a baking sheet with foil and spray with cooking spray.
Toss the turnips onto the tray, spray with cooking spray, sprinkle with chopped rosemary and ¼ teaspoon salt.
Roast for about 30 minutes, turning turnips halfway through the cooking time, until tender and brown.
Heat a skillet over medium high heat. Spray with cooking spray and when hot, add the steak. Season with remaining ¼ teaspoon of salt and pepper. Cook for 4 to 5 minutes per side, or to 140ºF for medium doneness. Turn every minute or so for even cooking. Transfer to a plate to rest and keep warm.
Add the spinach to the hot skillet. Sauté for 1 to 2 minutes until wilted.
To serve, slice the steak and serve with turnips and spinach.
