Air Fryer Pork Tenderloin

Ingredients
1 tsp olive oil
½ tsp garlic powder
½ tsp smoked paprika
½ tsp black pepper
1 lb. pork tenderloin
1½ cups mixed zucchini and yellow squash, sliced into ½ moons
½ cup chopped tomato
1 tbsp chopped onion
½ tsp oregano
1 cup broccolini
¼ cup water
½ tbsp margarin
2 tbsp reduced-fat feta cheese
Directions
Preheat your air-fryer to 400ºF.
In a small bowl, combine the olive oil, garlic powder, smoked paprika, and black pepper. Rub the pork tenderloin with the spice rub. Let it marinate for 15 to 30 minutes if you have the time.
Place pork tenderloin into the air fryer. Air fry for 17 to 20 minutes or until internal temp reaches 145ºF.
While your pork cooks, in a medium saucepan, combine the zucchini, tomatoes, onion and oregano. Bring to a simmer and cook for 10 to 15 minutes until vegetables are tender and not too saucy. Remove from heat so zucchini doesn’t get too mushy.
In a skillet, simmer the broccolini in water. Simmer until water has just about evaporated and broccolini is tender, about 4 to 6 minutes. Add the margarin and toss to coat.
When pork is done, remove from air fryer to a cutting board and let rest for 5 minutes before slicing, saving any meat juices on the board.
Slice the pork and divide it evenly among plates, serving each with equal portions of broccolini and the zucchini–tomato mixture. Garnish each with an equal amount of feta and spoon any remaining pan juices evenly over the pork.
