Banh Mi Pork Meatballs

Ingredients:

  • 1½ lbs. 85-94% lean ground pork

  • ½ cup minced mushrooms

  • 2 scallions, chopped

  • 2 cloves garlic, minced

  • ¼ tsp salt

  • ¼ tsp ground black pepper

  • ¼ cup white vinegar

  • ¼ cup water

  • ½ cup thinly sliced radishes

  • 3 cups cooked, riced cauliflower

  • 1 cup thinly sliced cucumber

  • ½ cup thinly sliced orange bell pepper

  • ¼ cup minced jalapeños

  • 1 cup fresh cilantro, chopped


Directions:

  1. Pre-heat oven to 425⁰F.

  2. Line sheet pan with parchment paper or foil. Spray with non-stick pan spray.

  3. Combine the pork, mushrooms, scallions, garlic, salt, and pepper in a bowl. Divide mixture into 24, (1-ounce) portions and shape into meatballs.

  4. Place meatballs on a sheet pan and bake for about 10 to12 minutes or until an internal temperature of 155⁰F.

  5. Bring vinegar, water, and a pinch of salt to a boil on stovetop or in microwave. Pour over radishes to pickle. Set aside. When ready to serve, drain liquid.

  6. For each serving, arrange ¾ cup riced cauliflower, 2 tablespoons bell pepper, ¼ cup cucumber, 1 tablespoon jalapeño, 2 tablespoons pickled radishes, ¼ cup cilantro, and 6 pork meatballs in a bowl as desired.
