Air-Fried Teriyaki Pork & Cashews

Cooks in under 20 minutes! Pork tenderloin brushed with a teriyaki and ginger sauce then air fried with broccoli florets.
Serve over Cauliflower Rice and garnished with Chopped Cashews
Yield: 2 servings
Total Time: 30 minutes
Prep Time: 10 minutes
Per Serving: 1 Leaner, 1 Healthy Fat, 3 Green, 3 Condiments
Ingredients:
1 lb. pork tenderloin
5 tsp teriyaki sauce
1 tsp olive oil
½ tsp grated fresh ginger
½ tsp grated garlic
Cooking Spray
1½ cups broccoli florets
1½ cups cauliflower rice
6 whole or ⅓ oz. roasted cashews, chopped
Directions:
Preheat air fryer to 425°F.
In a small bowl, combine the teriyaki sauce, olive oil, grated ginger and garlic.
Trim the pork tenderloin of any excess fat/silver skin. Pour the teriyaki sauce over the pork.
Spray the air fryer with cooking spray. Place the pork in the air fryer and cook for 8 minutes.
Place broccoli in a microwave-safe bowl with 1 to 2 tablespoons water. Cover with plastic wrap or paper towel and microwave on high for 1 minute.
Turn the pork, add the broccoli and then cook for another 7 to 10 minutes, or until the pork has reached 145°F.
Microwave the cauliflower rice as per package directions.
Remove the pork from the air fryer, let rest for 5 minutes and then slice into slices.
To serve, place ¾ cup cauliflower rice on a plate. Add ¾ cup broccoli florets and half of the pork tenderloin slices. Garnish with half of the chopped cashews.
