5 Minute Chicken Kale Salad

Ingredients:

  • 1½ cups pre-washed and cut kale

  • 1 tsp olive oil

  • 1 tsp lemon juice

  • ¼ tsp each: salt & pepper, preferably sea salt and cracked black pepper

  • 6 oz. white meat rotisserie chicken or pre-cooked chicken breast, cut into cubes or strips


Directions:

  1. Place kale in a medium bowl.

  2. Add oil, lemon juice, salt, and pepper.

  3. Massage kale with your hands for 1 minute to soften its texture and to evenly distribute the oil lemon juice mixture.

  4. Reheat chicken as needed (per package directions if using frozen pre-cooked chicken breast).

  5. Top kale salad with chicken and serve.


Tips:

  • Look for pre-cooked chicken breast strips and cubes in the freezer aisle of the grocery store.

  • If using a rotisserie chicken, remove the skin and use the chicken breast (white meat) portion, reserving the rest of the chicken for another meal.

  • A great recipe for meal prep; the tough fibers of the kale soften more with time.

  • For some extra spice, add ½ teaspoon red pepper flakes as a condiment.
