2 Minute Microwave Scrambled Eggs with Spinach

Per Serving: 1 Lean, 3 Green, 1 Condiment (if using salt & pepper)

Prep Time: 1 minute


Ingredients:

  • 3 large eggs

  • 2 cups baby spinach

  • ½ cup sliced tomato

  • ⅛ tsp each salt & pepper (optional)


Directions:

  1. Crack eggs into a large microwave safe mug or bowl (note: eggs will rise when cooking so use a mug or dish with a high rim).

  2. Add spinach and mix with a fork so spinach is mixed in with eggs.

  3. Cover and microwave spinach egg mixture on high for 30 seconds. Stir the egg mixture a few times, making sure to keep the spinach mixed in with the eggs. Repeat 2 more times or until the eggs reach your desired doneness.

  4. Serve with a sliced tomato.


Tips:

  • For easier clean-up, spray your mug or dish with cooking spray (10, ¼-second sprays = 1 condiment).

  • Mix in 3 cups of spinach instead of 2 cups and omit the tomato.

  • Instead of serving sliced tomato, dice the tomato and add to the spinach and egg mixture prior to microwaving.
