2-minute chicken tacos

Yield: 1 serving 

Per Serving: 1 Leaner, 1 Healthy Fat, 3 Green, 1 Condiment 

Total Time: 2 minutes 

Prep Time: 1 minute 


Ingredients.

  • 4½ oz. (after draining) canned chicken breast in water 

  • 2 tbsp salsa or pico de gallo 

  • 3 tbsp reduced-fat shredded cheese, such as cheddar or Monterey Jack 

  • 6 large lettuce leaves, such as butter leaf, green leaf, or romaine 

  • 1 of the following: 2 tbsp sour cream, 1½ oz. avocado, OR 2 tbsp guacamole 


Directions.

1. Mix chicken and salsa in a microwave safe dish with a fork or spoon. 

2. Cover, and microwave 30 to 45 seconds. 

3. Place 1 lettuce leaf on top of another, then fill with ⅓ of the chicken salsa mixture. Repeat with remaining lettuce leaves and chicken mixture for a total of 3 chicken tacos. 

4. Sprinkle one tablespoon of cheese on top of each taco along with any optional condiments of choice and serve.

With guacamole: 250 calories, 11g fat, 9g carbohydrate, 30g protein 

With sour cream: 250 calories, 11g fat, 8g carbohydrate, 30g protein
