Yield: 4 servings
Per Serving: 1 leanest, 3 greens, 2 healthy fats, 2 condiments
Total Time: 30 minutes
Prep Time: 15 minutes
Ingredients
1 lb. raw scallops
1 lb. peeled, deveined raw shrimp
¼ tsp salt
½ tsp white ground pepper
3½ cups broccoli florets
2 tbsp canola oil, divided
4 cloves garlic, minced, divided
2 cups chopped red & yellow bell pepper
2 tsp chicken bouillon
2 tsp sesame oil
1 medium scallion, trimmed and cut into 2-inch pieces
Directions
Toss scallops and shrimp with salt and pepper and allow to marinate for 10 minutes.
Meanwhile, add the broccoli to a pot of boiling water. Cook, stirring occasionally for 2 to 3 minutes, or until bright green and slightly softened. Drain thoroughly and rinse under cold water for 20 seconds to stop the cooking process.
Heat one tablespoon of canola oil in a wok or large skillet. Stir-fry broccoli, bell peppers, and half of the garlic for 2 minutes or until just tender. Transfer vegetables to a serving plate.
In the same wok or skillet, heat one tablespoon of canola oil and stir-fry the scallops, shrimp, and remaining garlic for about 3 minutes until cooked. Stir in chicken bouillon and sesame oil, and then turn off heat.
Divide the vegetables into 4 equal-sized portions and top each with 7 oz. cooked seafood. Garnish with scallions and serve.
