20 Minute Marry Me Chicken

This dish will get you a marriage proposal (or at least a second date!)….Thinly sliced chicken breast, oregano, and sundried tomatoes simmered in a creamy parmesan sauce. Serve with cauliflower rice and a salad on the side.

Prep Time: 10 minutes
Ingredients:
1 lb. chicken breast, thin sliced
⅛ tsp salt
1 tsp olive oil
1 clove garlic, minced
½ cup chicken stock
½ tsp dried oregano 2 wedges spreadable cheese, such as Laughing Cow Original
1 tbsp reduced fat parmesan cheese, grated
1 tbsp chopped sundried tomatoes, not packed in oil
1 cup cauliflower rice
1 cup sliced tomatoes
1 cup sliced cucumbers
1 tsp balsamic vinegar
2 tsp fresh basil leaves
Directions:
Season the chicken with salt.
In a large non-stick skillet, heat the olive oil over medium high heat.
Sauté the chicken 2 to 3 minutes until browned and cooked through. Transfer onto a plate and keep warm.
Add the garlic to the skillet and sauté for 30 seconds, then add the chicken stock and oregano, scraping up any brown bits on the bottom of the pan with a wooden spoon.
Adjust the heat to medium-low and stir in the spreadable cheese. Stir until cheese has melted. Stir in the parmesan cheese and sundried tomatoes. Add the chicken back to the pan and simmer for 1 minute more until warmed through.
Plate the sliced tomatoes and cucumbers on a salad plate and drizzle with balsamic vinegar.
Serve the Marry Me Chicken over cauliflower rice with the tomato cucumber salad on the side. Garnish with fresh basil leaves.
