Taco Bowl

Ingredients
Cooking spray
½ lb. 90-94% lean ground turkey or beef
1 tbsp taco seasoning
2 tbsp water
1 cup low sodium canned beans (black beans, kidney beans, pinto beans)
4 cups chopped romaine lettuce
½ cup halved or quartered grape tomatoes
¼ cup reduced-fat shredded cheddar cheese
½ avocado, sliced or diced (3 oz. avocado)
¼ cup thinly sliced or diced red onion
Optional toppings: 1 to 2 tbsp salsa, plain Greek yogurt, jalapeno slices, and/or fresh chopped cilantro
Directions
Heat a lightly greased skillet over medium high heat. Add the ground turkey (or beef) and cook until browned, breaking it into smaller pieces as it cooks, and no pink remains. Drain any fat.
Mix in the taco seasoning, water, and beans. Simmer for about 5 minutes.
Place an equal amount of lettuce in each serving bowl. Top with seasoned meat and bean mixture, tomatoes, cheese, avocado, red onion and desired toppings.
Tip: Make extra taco filling to freeze and use later! Double the amount of ground
meat, water and taco seasoning. Use 1, (15.5-oz. can) of beans and cook as
directed in steps 1 and 2, then divide into equal portions and store in a
freezer-safe container. Freeze for 3 to 4 months.
