Mediterranean Air-fried Salmon with Veggies

Ingredients
14 oz. salmon, cut into 2-inch cubes
¾ tsp salt, divided
½ tsp ground black pepper, divided
¼ tsp granulated garlic
1 tsp lemon juice
1 medium zucchini
4 mini sweet peppers
6 small campari tomatoes
Directions
Season the diced salmon with ½ teaspoon salt, ¼ teaspoon black pepper, the granulated garlic and lemon juice. Set aside and allow to marinate.
Cut the zucchini on a drastic angle into ½-inch thick slices and set aside.
Remove the stems and cut tomatoes in half from top to bottom.
Season the zucchini and tomatoes with ¼ teaspoon of both salt and black pepper.
Cook the zucchini, tomato halves, and whole mini peppers on a hot grill or grill pan on all sides for 6 to 8 minutes until well-browned and fully cooked. Set aside and keep warm.
Cook the salmon cubes in an air fryer at 400°F for 3 to 5 minutes (alternately, cook in a toaster oven at 450°F convection-bake for 5 to 6 minutes).
Divide the grilled vegetables evenly and place them on plates. Arrange 5 ounces of cooked salmon on top of each portion and serve.
