Mediterranean Air-fried Salmon with Veggies

Per Serving: 1 Lean, 3 Green, 3 Condiments

Total Time: 45 minutes

 

Ingredients

  • 14 oz. salmon, cut into 2-inch cubes

  • ¾ tsp salt, divided

  • ½ tsp ground black pepper, divided

  • ¼ tsp granulated garlic

  • 1 tsp lemon juice

  • 1 medium zucchini

  • 4 mini sweet peppers

  • 6 small campari tomatoes

 

Directions

  1. Season the diced salmon with ½ teaspoon salt, ¼ teaspoon black pepper, the granulated garlic and lemon juice. Set aside and allow to marinate.

  2. Cut the zucchini on a drastic angle into ½-inch thick slices and set aside.

  3. Remove the stems and cut tomatoes in half from top to bottom.

  4. Season the zucchini and tomatoes with ¼ teaspoon of both salt and black pepper.

  5. Cook the zucchini, tomato halves, and whole mini peppers on a hot grill or grill pan on all sides for 6 to 8 minutes until well-browned and fully cooked. Set aside and keep warm.

  6. Cook the salmon cubes in an air fryer at 400°F for 3 to 5 minutes (alternately, cook in a toaster oven at 450°F convection-bake for 5 to 6 minutes).

  7. Divide the grilled vegetables evenly and place them on plates. Arrange 5 ounces of cooked salmon on top of each portion and serve.
