Cod with Squash in Spicy Tomato Sauce

Per Serving: 1 leanest, 3 greens, 2 healthy fat, 1 condiment

Total Time: 30 minutes


Ingredients

  • 2 lbs. raw cod fillets

  • 2½ tbsp oil

  • 2 cloves garlic, finely minced

  • 2 fresh Thai chilies, seeds and membranes removed, minced

  • 4 cups diced fresh tomatoes

  • 1½ cups yellow summer squash or zucchini

  • 1½ tsp fish sauce, such as Vietnamese fish sauce

  • ¼ cup chopped cilantro


Directions

  1. In a medium-sized skillet, sear cod over medium-high heat in oil 3 to 4 minutes per side, or until it begins to flake with gentle pressure.

  2. Meanwhile, add garlic, Thai chilies, tomatoes, squash, and fish sauce to a medium pot. Simmer over medium heat until squash is tender, but not overcooked.

  3. Place cod fillets on serving dish and top with tomato sauce. Garnish with cilantro.
