Broiled Pizza Burgers

Yield: 2 servings
Per Serving: 1 Lean, 3 Green, 3 Condiments
Total Time: 45 minutes
Ingredients
8 oz. 94% lean ground beef
1 tsp salt, divided
½ tsp ground black pepper, divided
½ cup finely chopped green onion
1 cup coarsely chopped watercress
1 cup sliced Roma tomatoes
½ cup finely cut fresh basil
4 oz. part-skim shredded mozzarella
4 large green lettuce leaves
Directions
In a mixing bowl combine the ground beef with ¾ teaspoon of salt, ¼ teaspoon of black pepper, the watercress and scallions.
Shape the mixture into 2, equally-sized balls and flatten them on a solid surface with a spatula or similar to make patties of about ¼-inch thickness.
Sear the burgers in a medium-high heat dry nonstick skillet for 2 to 3 minutes on each side until well-browned.
Preheat the broiler in an oven.
Place the seared burger patties onto a sheet pan and top with tomatoes.
Season the tomatoes with the remaining salt and pepper and top with basil leaves and cheese.
Broil for 3 to 4 minutes until the cheese is bubbly and lightly browned.
Arrange one lettuce leaf onto each plate. Top each with a broiled burger and then a second lettuce leaf. Serve immediately.
Tips
For a fresh addition to the melted cheese, top burger with the fresh basil instead of broiling it under the cheese.
Substitute a slice of mozzarella cheese instead of shredded.
Substitute 1 tbsp of parmesan for ¼ tsp of salt for an extra cheese flavor.
