Air-Fried BBQ Tofu Summer Salad

Tofu cubes tossed in almond flour and seasonings then air fried. Serve in a fresh salad with assorted vegetables.

Ingredients

  • 4 tsp almond flour

  • ½ tsp smoked paprika

  • ½ tsp celery seed, crushed

  • ¼ tsp onion powder

  • 30 oz. extra firm tofu

  • Cooking Spray

  • 2 tbsp plain, nonfat Greek yogurt

  • 1 tbsp BBQ Sauce sugar free

  • 1 cup broccoli florets

  • 4 cups romaine / radicchio salad mix


Directions

  1. Preheat your air fryer to 400°F.

  2. In a bowl, combine the almond flour, smoked paprika, crushed celery seed, and onion powder.

  3. Cube the tofu into 1-inch cubes. Sprinkle spice mix over cubes and toss.

  4. Spray the air fryer basket with cooking spray. Add the tofu cubes in a single layer; you will probably have to cook in 2 to 3 batches. Spray cubes with cooking spray. Cook for 15 minutes, shaking the basket after 5 minutes. Continue with remaining tofu cubes.

  5. In a small bowl, mix the yogurt and BBQ sauce. Add 1 to 2 tablespoons water to thin out to a drizzle consistency. Set aside.

  6. Place broccoli in a microwave-safe bowl with 1 to 2 tablespoons water and cover with a paper towel. Microwave on high for 1 minute and then allow time for broccoli to cool.

  7. Divide salad mix into 2 cups and place each portion in a bowl. Top each with a ½ cup of broccoli, 15 ounces tofu cubes and a drizzle (1 tablespoon per bowl) of BBQ yogurt dressing.
