5 Ingredient Pork with Blue Cheese

Total Time: 25 minutes


Ingredients

  • 1 lb. pork tenderloin sliced into ¾-inch thick medallions  

  • 2 tsp olive oil, divided

  • 1½ cups button or cremini mushrooms, sliced

  • 4 tbsp blue cheese

  • 2 cups watercress

  • ½ cup jicama, cut into matchsticks or shredded

  • 2 tsp balsamic vinegar

 

Directions

  1. Heat 1 teaspoon of olive oil in a large non-stick frying over high heat. Add the pork medallions and sauté for 2 to 3 minutes or until browned.

  2. Flip the medallions then add the sliced mushrooms. Continue to sauté pork and mushrooms for another 3 to 4 minutes until pork and mushrooms are cooked through.

  3. Crumble the blue cheese into the pan to melt. Swirl the medallions and mushrooms with the blue cheese. Toss to coat.

  4. Toss the watercress with the jicama, the remaining teaspoon of olive oil and balsamic vinegar.

  5. To serve, place the salad on the plate and top with the melty blue cheese pork and mushrooms.
