Tuscan Salmon

Ingredients

  • Cooking spray

  • 2, (6-oz.) salmon filets

  • ½ cup sliced scallions

  • 3 tbsp light cream cheese

  • 1 cup chicken stock

  • 1 tbsp grated parmesan

  • 1 cup fresh spinach

  • ½ cup cherry tomatoes, halved

  • 1½ cups zucchini noodles


Directions

  1. Heat a non-stick skillet over medium high heat and lightly coat with cooking spray. Add the salmon fillets, skin side up and sauté for 3 to 5 minutes, then flip filets and continue to cook for another 2 to 4 minutes until cooked through. Transfer the salmon to a plate and keep warm.

  2. In the same skillet over medium heat, add the sliced scallions. Sauté 30 seconds.

  3. Stir in the cream cheese until melted, then whisk in the chicken stock until smooth. Add the parmesan cheese.

  4. Add the spinach and tomatoes and stir until spinach is wilted.

  5. Add the zucchini noodles and toss until coated with sauce.

  6. Evenly divide the zucchini noodle mixture onto plates. Place a salmon filet on top of each and pour any remaining sauce over the salmon.
