Turkey Pizza Meatloaf

Ground turkey and pizza seasonings molded into a meatloaf then topped with tomato sauce and mozzarella cheese. Serve with a side salad
Yield : 4 servings

Ingredients
1½ lbs. 95% – 97% lean ground turkey
1 large egg
¼ cup reduced fat grated parmesan cheese
½ cup sliced green onions
2 tsp oregano or Italian seasoning, divided
½ tsp salt
1 cup petite diced canned tomatoes, divided
⅔ cup shredded reduced-fat mozzarella
½ cup green pepper, sliced into rings
½ cup sliced mushrooms
4 cups chopped romaine lettuce
1 cup chopped tomatoes
½ cup sliced cucumbers
4 tbsp Italian Dressing
Directions
Preheat your oven to 350ºF.
In a bowl, lightly mix ground turkey, the egg, parmesan cheese, sliced green onions, half of the oregano (or Italian seasoning) and salt.
Line a rimmed baking sheet or jelly roll pan with foil. Place the meat mixture onto the pan and shape into a loaf. Bake for 40 minutes.
With a fork, mash the canned diced tomatoes into a chunky sauce consistency and stir in the remaining oregano. Spread ½ cup over the loaf and return to the oven for 5 minutes.
Top loaf with mozzarella cheese, then arrange some green peppers and mushrooms over the cheese. Return to the oven for 8 to 10 minutes. If desired, turn oven to broil and broil for 1 to 2 minutes for a golden top.
Slice into serving slices.
Toss romaine, chopped tomatoes, cucumbers and remaining green peppers and mushrooms.
Serve meatloaf with the remaining crushed tomato sauce and the side salad drizzled with Italian dressing.
