Slow Cooker Beef & Broccoli

Yield: 4 servings

Per Serving:  1 Lean, 3 Green, 3 Condiments

Total Time: 3½ hours

 

Ingredients

  • 1½ lb. sirloin steak, sliced into ¼-inch thick pieces

  • ½ cup beef broth

  • 4 tsp hoisin sauce

  • 1 tbsp soy sauce

  • 2 tsp grated fresh ginger

  • 1 tsp minced garlic

  • 2 cups broccoli florets, halved if large  

  • 1 cup scallions, sliced

  • 3 cups cooked cauliflower rice

 

Directions

  1. In a slow cooker, combine the steak, beef broth, hoisin sauce, soy sauce, ginger, and garlic. Toss well to coat. Cover and cook on low for 3 hours. 

  2. Add the broccoli and scallions, saving some scallions for garnish. Continue cooking another 15 to 20 minutes, until broccoli is tender.

  3. Serve the beef and broccoli over cauliflower rice. Garnish with the reserved sliced scallions.
